Night at the races


Here are a few pictures of the kids at the races.  Robert raced in the enduro series race at Watsonville last Friday night. We all had a great time even though Robert didn't get to finish.

Another Recipe from Elise's Kitchen . . .

Elise is an amazing cook. Let me say that again, amazing. Everything I've had from her kitchen is so tasty - she definitely has the knack! She emailed me this recipe to share - and I believe she is going to share more recipes with us! Pretty soon we will have a "In the Kitchen" tab with recipes from the different family kitchens. How fun is that?  

This is what Elise wrote to me:

Sometimes I feel for my kids.  Maybe they are like me and just want to have junk food all the time and have it be good for you.  So I saw this recipe and had to make it.  It turned out beyond yummy and the kids helped me make it.  I was super surprised at how awesome coconut oil is to fry in.   put about 1'2 inch into my pan and just turned the chicken over after about 5 minutes. No gross smoke smell like from peanut or canola oil.   I added Italian seasoning and Parmesan to the bread crumbs for funI used regular ol bullseye BBQ sauce that has no gluten ish ingredients, but doesn't advertise GF for dipping.  With a side of corn and lemon pie with marshmallow topping ( recipe to follow) it was  a great dinner.   ~ Elise

 

Gluten-Free Chicken Nuggets

An excellent source of protein, chicken can be made into finger foods that appeal to kids. These nuggets are not from you-know-where but your child should love them. They freeze and reheat beautifully—so make a lot! Serve with your child’s favorite dipping sauce.

8 ounces boneless, skinless chicken breast
1 egg* 2 tablespoons water
-Gluten-free bread crumbs (2 slices gluten-free bread)
-Salt and pepper, to taste
-Garlic powder and onion powder, optional, to taste
2-3 tablespoons canola oil or coconut oil, for frying

1. Slice chicken into strips. Then cut them into bite-size chunks.
2. Beat egg lightly with water and pour into a shallow dish or pie plate.
3. In another shallow dish, season bread crumb mix with spices.
4. Dip chicken pieces first into the egg mixture. Then roll each piece in the breading to coat well.
5. Fry chicken in very hot oil, about ½-inch deep, until golden brown on all sides. Drain well on paper towel-lined plates. Serve warm.


*For Egg-Free Nuggets, mix 4 tablespoons flax meal with 5 to 6 tablespoons hot water. Add more hot water 1 teaspoon at a time if too thick. (Keep it thick and sticky.) Dip chicken in mixture and then roll in bread crumbs.

Beach Vacation and 4th of July

From June 29th through July 9th the whole Carlino Family stayed at the beach.  It was such a wonderful experience.   We really go to know each other again by living together again.  Each family took 2 nights to to make dinner for the whole family.  It was really fun to see how my siblings cook and see how they work as a family. How alike we are and how our spouses have influenced us and helped to us to grow and change.  We also, took a Costco trip at the beginning so that we could share the necessities without everyone having to bring their own and being separate.  It was our first real trip together as an adult family taking care of our parents.   We brought to young ladies with us Rachel Schaper and Katie Vacarrezza to help with the children so all of us could enjoy some vacation time.  That was definitely one of the best decisions ever.    Here are a few pictures.  I will add more when my camera stops acting up.  Enjoy!

Jay, Anna's husband is an avid fisherman and so Bobby's bestest best Uncle for the trip.  They caught a few crabs, a shark and some other monster form the deep.

Gianna, Joyce and Addy: Video Edition!

This is a shout out to the little girls in the family! It's been awhile since we have seen videos on our blog. The three granddaughters all have quite the personality. I can't wait till the day they all get to hang out together! For now they will just have to have a virtual party.

First Up: Adeline Felicity our Dancing Queen!

Next Up: Joyce the Giggler. 


Joyce is Daddy's girl for sure. It was so sweet to see the bond that Robert has with her. 



Last but not least: Gianna the Teenage.


This isn't the best video of her talking to Nana and Uncle Thomas, but it's one of them! I think she would talk on the phone all day if I let her. I don't know what to do with this girl!



There are seven Grandbabies: Bobby, Gianna, Joyce, Max, Adeline, Peter and William. Next time we will have to do a video edition of the little men in the family!

Mom/Nana's wonderful visit!

Mom came and stayed with us for a few days in June. While she was here she stayed in the kids room with them, was never without William in her arms and stayed up late chatting with me.  Bobby and Joyce followed her around like puppies.  The anthem of her stay was " Where's Nana, Where's Nana?" We kept ourselves busy with a day at Alum Rock Park swinging in swings.  A day down at my parents' house where the kids played on the slip and slide and Mom and my Mom made a lovely witch's brew. click here to see what its all about.  Saturday was a beautiful day at Happy Hollow Park and Zoo.  Where we picnicked and enjoyed the animals and rides.  Saturday night Mom Robert, William and I went to dinner and then to see "For Greater Glory" Robert and I couldn't remember the last movie we saw a movie in the theaters.  We like to have time together on our date nights but were very glad to have seen this one.  This movie puts us in mind that in the span of time these happenings were not long ago and are more like current events then history, also to live the Faith God has so generously given us.  We were so blessed to have her to ourselves for a little while.  Thank you Mom for not only being the best mom and person in the whole world, but also for being an amazing real to life example of motherhood, womanhood and wifehood. We love you.

So this was pretty funny.  A s you can see Robert, as any good father would have done, is recording Bobby on the roller coaster while laughing hysterically.  This ride was a bit past Bobby's comfort level.  He was on the verge of crying the whole ride.  He held it together very well and was just terribly dazed for about half an hour after.  I am working on getting the video off Robert's phone.

From Elise's Kitchen:


Toasty Coconut Macaroons



Ok So I made these and they are bomb!  This is an Alton Brown recipe. I melted some semi sweet chocolate chips and dipped the tops. Very good and simple.

Ingredients

4 large egg whites
Pinch salt
1/2 cup sugar
1 (8-ounce) package sweetened shredded coconut, lightly toasted

Directions

Preheat oven to 350 degrees F. In a mixer fitted with a whip attachment. whip egg whites and salt until they become white and begin to stiffen. Add sugar in 3 parts. Continue to whip until the egg whites are very stiff. Using a rubber spatula fold in toasted coconut.

On parchment lined cookie sheets, drop a teaspoon of the mixture leaving 1 to 2 inches around each cookie. Place into the oven and bake for 15 to 20 minutes. The outside should be golden brown but the insides should still be moist.

Oh Lovely Lady May


 Hi Everybody!  We have had an exciting start to our summer. Check out the pictures for details!!


William spends alot of time chillin' with Daddy in the garage.
as well as being held by Bobby.  He is a good motivation.  Bobby will get things done well and fast so he can go play with William.  He also, takes pride in telling everyone we meet that this is his little brudder!
William loves to chill in the center of attention.  Here he is in the middle of the food table when we were picnicking with my sisters.  Later that day he was snoozing on the island at my Mama's house.

 William's first swim at 3 1/2 weeks old. He loved it!

Joyce is quite the fish and spends the whole time on Robert's back like a barnacle.  She is very good at  keeping her head above water as he swims around.

Over Memorial weekend we all went down to the ranch with the Leon Schapers.  Bobby would wake up in the morning go grab this green helmet, because it is the only one that fits his mondo huge head, and wait for the boys to wake up and give him a ride. the only way you could get him  to leave is if you promised to go fishing.

I left William on the bed and went to get changed.  When I came back I found that he was now Joyce's little doll.. Thank goodness for guardian Angels.

Bobby graduated form preschool last week.  Yay Bob!  they did a great little program with song and dance and then a party after.  A great memento was that they had all the kids sign each others white shirt. A great idea that store's easy
